Some historical notes on the structure: "La neviera, "a n'ver": the ice factory of the Valle d'Itria" In terms of size and production, located about 3km from Martina on the road to Locorotondo, it was the reference neviera for the entire Itria Valley. In ancient times, in order to have ice available during the warmer months, the snow was stored in underground constructions suitable for preserving the temperature close to zero: the compressed snow was stored in the form of ice until the following winter. Built in the seventeenth century, "a n'ver" of the Valle d'Itria was an important ice factory owned by the Duke of Martina Franca, who held the monopoly. The ice was transported from the neviera to the outlets located in the inhabited centres.
